Turbo Spare Ribs @ 350F


Typically, it can take over 5+ hours at 225 degrees F to cook a rack of pork spareribs.  

For the past 3 cooks, I've been experimenting with a technique I read about on the Big Green Egg users forum called "Turbo Ribs".

For this cook, I decided that I would try and make a spatchcock chicken, a rack of pork spare ribs, and baked russet potatoes.  


I decided to do this on my Kamado Joe Big Joe.
